Sweet Potato BBQ Pork Tenderloin Delight and BBQ Chicken Breast Delight

This dish is a true flavor standout—sweet, savory, and utterly comforting. The tender BBQ meat brings a rich, smoky depth, perfectly counterbalanced by the caramelized natural sweetness of the roasted sweet potatoes. SWEET POTATO BBQ PORK TENDERLOIN DELIGHT

Ingredients:

  • Organic sweet potato (Large)
  • Diced green onions (2)
  • Pork Tenderloin (small)
  • Water (2 cups)
  • Barbecue Sauce (Open Pit/Sweet Baby Rays) - 6 ounces
  • Cinnamon - 1 tablespoon
  • Nutmeg - 1 teaspoon
  • Brown sugar - 1 tablespoon
  • Almond butter - 1 tablespoon
  • Egg (1)
  • Salt and pepper/garlic powder/onion powder/cayenne pepper to taste

 

SWEET POTATO BBQ CHICKEN BREAST DELIGHT

Ingredients:

  • Organic sweet potato (Large)
  • Dice green onions (2)
  • Chicken Breast (4 - 6 oz)
  • Water (2 cups)
  • Barbecue Sauce (Open Pit/Sweet Baby Rays) - 6 ounces
  • Cinnamon - 1 tablespoon
  • Nutmeg - 1 teaspoon
  • Brown sugar - 1 tablespoon
  • Almond butter - 1 tablespoon
  • Egg (1)
  • Salt and pepper/garlic powder/onion powder/cayenne pepper to taste  

Directions:

  1. Preheat oven to 375 degrees.
  2. Place the pork tenderloin or chicken breasts in baking pan, season all over with salt, pepper, garlic powder, onion powder and cayenne pepper to taste, add 2 cups of water. Cover the baking pan with plastic wrap and then aluminum foil. Place in oven for 45 minutes to one hour or until tender. 
  3. Meanwhile, boil sweet potato until completely soft.
  4. Remove sweet potato from water and peel off skin.
  5. Place the sweet potato in a bowl with the cinnamon, brown sugar, nutmeg, almond butter and one egg. Stir and mix together until all ingredients are blended completely into a smooth sweet potato sauce. Set to the side and keep warm.
  6. Once the meat is done, use two forks to shred the meat until fully shredded and pulled.
  7. Add barbecue sauce and mix in thoroughly with the meat.
  8. Cover the baking pan again and place back in 275 degree oven for another 20 minutes 
Plating:
  • Place sweet potato mixture on plate as foundation for the dish. Then mount the meat on top of sweet potato mixture. Use the diced green onions as garnish.
